大公さんなど札幌の老舗ラーメン店がある狸小路5丁目、6丁目、富公さんの系譜を継ぐといわれる一徹さんにお邪魔。口コミでよく登場する青じそラーメンの醤油味を注文。
麺は西山製麺ながらいわゆる札幌の中太ちぢれ腰強ではなく、旭川ラーメンのような細めのストレート、炒めて(フランペ！)甘くなったたまねぎとモヤシがスープ全体のまろやかさを演出している。食べ飽きない程よい油加減と感じるのは、青じそが放つ微かな清涼感が寄与している。まるでイタリアンのバジル料理のような心地よさ。元洋食のシェフが、老舗の伝統を守りつつ、このラーメン激戦地札幌で個性を発揮しつづけている理由の１つだと感じた。
