名店で修行された三代目大将が継がれた札幌の老舗和食店です
京都『木山』さん、鎌倉『北じま』さんで立ち上げから関わられた大将のお店です
初代から継承されている一品や先代からの山菜の採取場所などを活かしつつ北海道食材での料理に挑戦されています

「生シャコの一皿」
漁師さんに特別にお願いして浜茹で前の生シャコを仕入れでルイベに、子持ちの生シャコのねっとり感と甘味がよいですね、ハマボウフウとフルーツトマト、土佐酢ジュレで
「鯛と蕗の椀」
本枯節、鰹節、鮪節を目の前で削りその一番出汁の椀、釧路の天然蕗と噴火湾の鯛は火入れよく食感もよし
「まつくら芋」
初代から継承されている一品、ニセコの越冬男爵芋を贅沢にバター煮、芳醇な香りとしっとり甘い芋が美味しいですね
「根曲がり竹の炭焼き」
根曲がり竹を蒸してから炭焼きして苫小牧のやわらかい木の芽をあわせます、横に添えられた根曲がり竹のすり流しをソースのようにつけていただくと香りも甘みも楽しめます
