札幌市中央区すすきの、ススキノ市場の北側、新宿通りに面したビルの1Fに入っている天麩羅やさん。
天麩羅やぎ。
すすきの３６号線沿いに店を構えていた老舗天麩羅、蛯天本店の店主だそうな。
たしか約３０年前初めて札幌に来たとき、会社同期と入ったなぁ。
正直あまりピンと来なかったんですよね。
マイレビュアさんたち概ね評価高いので、一度お邪魔したいと思ってました。
ランチ営業していると知り、月曜１１時半くらいの訪問。
昼のすすきの、違和感あるけれど割と好き。
ビルのエントランス入り、直進し右手。
純和風な佇まい、白地に「やぎ」の暖簾、壁には花がイケてありいい雰囲気。
扉開けて中へ。
右側はテーブル席な空間（半個室）、左手に進むと板場を囲うようにL字カウンター席です。
白木な落ち着いた空間。
先客はカウンターに若い女子ソロ、天丼で食事後半戦。
板場に店主、ホールはお手伝いの年配女性。
天丼か定食か迷うが、定食に。
＊天麩羅膳 3200円
蛯２尾、鱚、烏賊、春菊、南瓜、他一品＝ピーマン、
茶碗蒸し小鉢、酢の物、ご飯、味噌汁、香の物、水菓子。
初めにお冷、天つゆ、香の物が用意される。
お冷が、写の通り琉球グラスみたいな青いグラス。
天つゆにあらかじめ大根おろしが入った状態で提供。これも？個人的に別にしてほしいなぁ。
塩も欲しいなぁ。
小鉢＝冷奴、うーん、この時期に冷奴？？
酢の物＝酢の物に変わり、春雨と竹輪の和え物。
この２種出された時点で、瓶ビール（キリン一番搾り）をオーダー。
蛯、鱚、春菊をいっぺんに提供。
次に烏賊、ピーマン。
最後、蛯、南瓜。
あっという間、ペース早いなぁ。
天麩羅は、いわゆる花を咲かすという揚げ方技法でサクサクな衣が特徴でしょうか。
見た目もきれいです。
３０年前の印象はもっと大げさな花を咲かせていたビジュアルだったような気がする。
今の方が好きかな。
茶碗蒸し＝蛯、帆立、蒲鉾、煮栗、椎茸と具材豊富で申し分なし。
丁寧な出汁の茶碗蒸しで美味しかった。
ご飯、白米そのものが美味い。
味噌汁＝なめこ、三つ葉、ほのかに山椒。美味い。
水菓子＝柚子シャーベット
お茶＝最後の緑茶、美味しい。
ランチだから、一品ずつ揚げるのは無理があるのかな。
2～3品ずつ提供されるのはちょいとペース早いかなぁ。
時間がない人だと、サックっと切り上げられるから助かりますけれど。
違うタネを同じ温度で揚げるとなるとやはりね。
烏賊は薄切りなのでかなり火が入っていた状態だったのが残念。
昼は天丼がよかったかも。やはり天ぷらは夜なのかも。
