毎年恒例の正月明けの札幌に、、
このお店はずいぶん前に予約をして伺いました。
料理は素材の味を生かす最小限の味付けが印象的、どの料理も食べた後に雑味が残らないのが驚き！
この辺りの良いお店は一品目に温かい物が出てくるのは定番なのか味もさることながら蟹の茶碗蒸しは嬉しい。
平目は熟成してるのか身が柔らかく旨味が増してる、久しぶりに美味しいと思える平目でした。
メヌケは脂のノリが丁度良く、おろしが良く合います。
白子のすり流しは濃厚な白子とアクセントが効いた味付けが良い、すり流しにするのはさすがとしか言いようがない。
ホタテの磯部は漬けのホタテが濃い目の味で海苔との相性が良いと思いました。
すま鰹は鮪に近い味で脂が丁度いい。
握りはどれも綺麗で口の中でほぐれる感じが良い、ネタとのバランスも丁度いい印象。
赤酢のシャリも主張はしないけど硬さが丁度良く、ネタとの相性も良いと思いました。
特に北寄は抜群の身の厚さと旨味、このレベルの北寄は初めて食べました。
鮑は蒸して柔らかく仕上げた身と肝のソースが抜群の美味しさ、丼で食べたいぐらい。
日本酒も色々な地酒が揃い、美味しいものが揃ってるのはさすがですね。
握りやつまみはレベルが高くどれも満足感ありましたが設定金額がお高めなのでそれなりの覚悟が必要です。
最後に食事の時間が2時間設定なので料理の内容とペースを考えるとあと30分欲しいと思いました。
