Before entering the restaurant, there was a sign on the door saying, "Due to the fact that we are the only one operating the restaurant, depending on the situation, you may have to wait more than 30 minutes for your meal." I understood that the lack of staffing was a factor, and entered the restaurant. ◾️Today's order - Tenseiro The menu recommended the special curry nanban, but I wanted to eat soba noodles, so I ordered Tenseiro this time. I thought it would take 30 minutes to be served, but the Tenseiro arrived in about 15 minutes, which was faster than expected. It seems that everything from peeling the buckwheat to home-made milling and hand-kneading is done in-house. The soba noodles are thin and have a refreshing texture (80% Hokkaido buckwheat flour, 20% Hokkaido wheat flour). The noodle soup is a combination of dashi made from two-year-old Honkare Honbushi bonito, ma kombu, and dried shiitake mushrooms, with soy sauce and mirin. It is a dry soup with a moderate sweetness. The soy sauce is quite salty, so it was just right to dip the tip or about a third of the noodles in it. Tempura consisted of one shrimp and vegetables. The shrimp tempura was crispy and delicious. Hokkaido Spicy Curry Nanban seems to be a specialty, so I would like to try it next time. Thank you for the meal.
