鯛タルタル 海老のコンソメジュレ〜日高産つぶのラグーとパルメザン・チュイルを添えて〜
海老の旨みとほんのり苦味を味わえるディルオリーブオイルをさっとまとった前菜。
つぶの弾力と旨みも楽しめる構成です。
プレートの縁に繊細な彩りで春の訪れを目でも楽しませていただきます。
●Plat ～メイン料理～
・北海道産「アイナメ」のソテー
ソース・ヴェールとアーモンドの香りの焦がしバターソース
私はメインはお魚にしました。
皮目をパリっと香ばしく火入れされたアイナメは、身がふっくらしていて
実に美味しい♡
素揚げされたゴボウのアクセントとほうれん草とクレソンのソースのまとまりが
またよき☺︎
兄と母はお肉をセレクト。
・北海道産「牛ほほ肉」の黒ビール煮込みじゃがいもピューレとクミン風味キャロット添え
トラディショナルなタイプの重厚なソースと思いきや、酸がほど良くきいていて重すぎず
バランスよく仕上げています。
ほほ肉はとっても柔らかく、ナイフがいらないんじゃないかというほどに、じっくり
火が入っています。
●アラカルト（追加オーダー）
・牛タンの赤ワイン煮
アラカルトで牛タンをいただけるとのことだったので事前予約し、いただきました。
牛タンの厚みと弾力を楽しみながらいただくような火入れ具合と重厚なソースです。
３人で十分シェアできるボリュームに圧巻でした。
しっかりとしたメインがいただきたい方におすすめです。
●Dessert en Verre ～ヴェリーニスタイルのデザート～
「アグリューム」のヴェリーニは、コースの締めにふさわしいデザート。
マスカルポーネは軽めでスッと抜けていく感じがとても心地よかったです。
アラカルトなしだとサービス料・税込で4000円でいただける、素晴らしい
コスパで家族が大喜びでした。
プレ誕生日会で伺いましたが、来てよかったです。
デートやお祝いごとにおすすめのレストランです。
