The first food tour of July was lunch at "Sachiku Mugiou Loin Cutlet" at "3104 Shiretoko Soup Curry". The restaurant is located in Hiragishi Golden Gai, in the basement of the Second Matsui Building, which is directly connected to Hiragishi subway station. I wanted to eat the loin cutlet, which is only available on Wednesdays and Thursdays, and on my third attempt I was finally able to get it. There are only five counter seats inside the restaurant, and I sat at the back right and ordered the loin cutlet I was looking for from the menu...I ordered the spiciness level recommended by the chef at 256 (32-256 is +50 yen, 512-1024 is +100 yen, 3104 is +150 yen), and 180g of regular rice (only turmeric rice) (large portions are free up to 250g, tower 300g is +200 yen). I waited for 20 minutes (the chef announced this when I ordered), and before me was a hot, spicy soup and a freshly fried, slightly pink cutlet with a great cross-section. The soup is full of flavour, made with 100% Mugio tonkotsu base combined with Rausu kelp and Japanese dashi made from salmon flakes! It's spicy enough to stimulate your appetite... I didn't feel the richness or strong taste of the tonkotsu. Personally, I found the spiciness level of 256 to be a little on the weak side... but this soup is really tasty! I drank it all up! *Vegetables include potatoes, pumpkin, zucchini, bell peppers, paprika, carrots, broccoli and eggplant. The pork cutlet is thick and has a firm texture, but is juicy and has great fat! The quality of Mugio and how it's fried was top notch. This small restaurant was packed with deliciousness.
