憧れの勝栄鮨さんに初訪問です。
札幌を8時に出発し10時30分頃に到着した時には、店の前に既に5台の車が。停車後、店入口にある受付簿に記名して待ちます。
11時の開店後、順々に客が呼び込まれます。ラッキーなことに前の組がキャンセルとなり、一巡目で入店。入ってすぐ左手の小上がりに案内されます。
おまかせ寿司12貫3,500円をオーダー。
待つこと約20分。
大トロ、イカ、ハマチ、鯛、北寄貝、ホタテ、ウニ、アワビ、タコ、毛ガニ、ツブ、ボタンエビ のフォーメーション。
まず、ネタがでかい！そして光ってる！
シャリも酢具合、固さ、大きさがネタとよくマッチ。
大トロは赤身と脂の具合が程よく、季節物のウニは神恵内産もののみを使用とのこと。アワビは磯の香りと歯ごたえが口の中でブレイクします。
一つ一つの握りがしっかりとネタの個性を引き出した12貫で、大満足です。旨かった。
食事を終え12時頃店を出ると、店の外には約10組ほどの待ち客が。
厨房は大将とおかみさんのツーオペで頑張っておられるのですが、店内に「新北海道スタイル」の紙を掲出されている中、おかみさんが下を向いて軍艦巻を作りながらカウンターの常連とマスク無しで大声で喋っているのはいただけません。
それも含めて港町の古き良き寿司屋さん、ということなのかもしれませんが(^^;
ごちそうさまでした。
