冬になるとシーズン中２～３回は行っていますこちらのお店。
鍋の種類も色々とあるようですが、オススメは断然「博多水炊き」です。
１階の厨房の大きな寸胴鍋で大量の鶏ガラを長時間煮込んで白濁したスープになっています。
そのスープはコラーゲンが豊富なため、登場するときには固まってプルプルしたゼリーになっていることもあります。
スープが沸騰し始めたら肉から順に入れるのですが、最初はスープを小さな湯飲みに入れそのまま飲むことをお勧めされます。
最初からすでに濃厚な白湯スープで、ついついおかわりしてしまう程。
福岡でも有名な水炊きのお店を何店か回ったことがありますが、こちらのお店のスープは地元の名店と比較しても遜色ない完成度です。
もちろん鶏肉やミンチを入れて煮ていくとさらに濃厚なスープになります。
お肉も野菜も手元のポン酢で食べるのですが、それらも美味しいです。
冬の寒い日は、美味しい白湯スープで体を温めるのにぴったりです。
福岡の「橙」という水炊きの名店はワインも豊富に取り揃えており、鶏料理に合うワインを置いているのはワイン好きとしては非常に嬉しいと思いました。
お酒のラインナップを豊富にしていただけるとさらにポイントアップでしょうかね。
今年も再訪します。
