創作モダンフレンチ。、圧巻でした。
味、接客、空間すべて良し!
全てがバランス取れていました。
食べたことのないようなお料理ばかり出てきます。
シェフが苦労して、アイデアを凝らして、考え、作ってるんだなというのがひしひしと伝わります。
これは、なんだろう?と一品、一品考えさせられる作品。なんでこの組み合わせ?と一般人なら思うような組み合わせだけど、合うんだー!と納得。
お昼のランチに伺いました。お客様は、私入れて3組のみ。カウンターに座りました。
1人の店員さんが、最初から最後まで、丁寧に接客、説明してくれました。とても感じもよく、なんでも完璧に答えてくれました。
まず空間がおしゃれ。テーブルの引き出しに、ナプキンや、ナイフ、フォーク、メニューが入ってます。
①前菜
前菜4種も食べたことないものばかり。
②アジ
ココナッツミルクと、オリーブオイルがアジになんとも言えず合う。
③マグロ
④シルクスイート
炭をまぶして、蒸し焼きにしているとのこと。こんなに甘いさつまいもは食べたことありません。しかも粘稠度も高い。赤ワインで作った塩が、また合う!!
⑤ブイナーダ
お魚料理は金目鯛です。
お皿左の黒いものは、じゃがいもとイカスミで作った焼き菓子みたいなものでした。ブイヤーベースをかけてくれます。
⑥ブランマンジェ
食品ロスの軽減にと考えられた作品。しかし、おいしい笑 うーん。舌鼓を打たずにはいられません
⑦穴栗牛
大根、玉ねぎの下になんとも柔らかいお肉が隠れてます。赤ワインソースで。
⑧とうもろこし
⑨お茶菓子
二ヶ月ごとにメニューが変わるらしいのでまた行きたいと思います。
