さて入店。
予約した席に案内される。
テーブルセットが出来ている。
グレーの板のとこに水を差す。え?おしぼり??
テーブルにあった封筒を開封。
本日の料理とドリンク。この店のコンセプトの3枚の紙。
ドリンクを聞かれる。とりあえず『白』を。
飲み口を聞かれて、テイスティングするみたい。
ワインが提供される。好みを聞かれた通りのイタリアワイン!
アミューズは鴨肉や生ハム。オリーブの身 実に数の子など正月仕様。え?かなりレベル高いぞ!
振り返るとアイランドオープンキッチン。料理人が腕を振るう。
前菜一品目:1本釣りの『サワラ』をカブラのスライスにシャンパーニュのジュレ。をクリームソースにイクラなどを。ものすごく優しい味付け。そしてクリームソースも酸味がある中にイクラなどが爽やか。すげぇ。
前菜二品目:『白子』にトリュフをベースに。なんか香ばしい黒いものに『白子』濃厚さに焼かれたトリュフベースの黒いやつ。抜群。
甲殻類の一品:『香住蟹』を編み上げたズッキーニ。中には『香住蟹』を蟹の風味より、周りの瑞々しい香りが不思議な味。
提供時にたくさん料理の説明を聞けど覚えきれず。
自家製のパンが来たぞ?
魚料理:『瀬戸内ブイナーダ』?『クエ』のブイヤベース。さまざまな味が口に広がる。器の縁の黒い魚の骨っぽいのはイカ墨などで仕上げたチップス。スプーンの上に『サフラン』を使ったソースにスープを注いで旨みを引き出す。
肉料理の前に『宝箱?』
肉料理:『宍栗牛』ベースの料理。先程の『宝箱』には黒トリュフ。目の前ゴリゴリと惜しみなく。脂の清々しい肉。特製ソースにトリュフ。宝物並みのおいしさ!ミラクルで楽しめるコース。口の中に『トリュフ』炸裂。
デザート:『りんご』のムースの小さなりんご。『りんご』のコンポートで作った花びら。『ピスタチオ?』を使ったジェラード。
『りんご』のムースの中には『りんごのコンポート』。
最後に『オリジナルフレーバーティー』にお茶菓子。すごいのは『フレーバーティー』。鼻に抜ける香り。口の中に広がる爽やかさ!
今までの『フレンチ』を覆すほど最高のひとときを過ごせました!
