手の込んだ繊細な前菜がのっけから4品も✨
とにかく、メインになる食材はもちろん
素材を一番美味しく食べられる技法で
丁寧なお仕事されてます。それに加えて、
脇役になるものの丁寧さやこれ作るのに
絶対に時間かかってるはず…と思う
飾りパーツやスープ、ソースもどれも手抜き
なしにこだわられているのには頭が下がります。
演出もワクワクでした✨
▪️前菜
⚫︎かぼちゃのミニチュアみたいなかぼちゃ♡
中はかぼちゃムース。作りが繊細
⚫︎黒いボールトリュフ
⚫︎ブータンノワール ソーセージ風なのは
よく見かけますが、柑橘ジュ入っては巻き風
なビジュアル。凄く凝ってる
⚫︎甘エビとラフランスタルト
▪️スモークしたサワラに大根を花びらのように
見たて、大根の食感が干瓢のよう。
飾りが色鮮やかなソースを素敵に演出
柑橘系の爽やかさがあり食欲をそそる
▪️白子と淡路の玉ねぎ
玉ねぎ尽くしの一皿。白子の甘みと玉ねぎの
甘みで調和された甘み♡パリパリとしたせんべい
のようなものが食感を引き立てます。
▪️瀬戸内ブイナータ
長崎のクエにブイヤベースをかけていただき
ます。スペシャリテらしく、ブイヤベースが
めちゃくちゃ美味しい♡体に染み渡る美味しさ。
▪️焼きたてお芋さん登場
何かと竹炭で混ぜたものを魚の塩釜風
にお芋に被せ焼いたもの。一つの食材を
最高の状態でいただける工夫と時間のかけ方
が凄いです。お芋本来の甘さが際立ってました。
▪️七谷鴨
最近よく七谷鴨をよく耳にするのですが、
食したことがなかったので嬉しい✨
皮部分をパリリと焼きあげ、充分な
旨味。美味しく仕上げてあります。
▪️デセールとオリジナルハーブティー
⚫︎蜜柑を使ったプレート
⚫︎マカロン・チョコレート
小さくて繊細なマカロンもチョコレートも
美味しくいただきました。
オリジナルのハーブティーもこれまた
絶妙な配合で、お砂糖を入れなくても
バニラの自然な甘みが心地よかったです。
飲み物は3種類のペアリングにしましたが、
どれもバランスの良いチョイスで、抜群な
マリアージュ♡
