訪れたのは12時頃、店内は賑わっていましたが運良く席が少し空いており待つ事無く入店、「鯖そば元味」(900円)の食券を購入しカウンター席に座り着丼を待ちます。
どんぶりには、チャーシュー、水菜、タケノコ、アーリーレッド、鯖節、丸ごと一匹鯖煮干が盛り付けられています。
スープは鯖節、鯖煮干等から引かれた鯖の旨みがガツンとくる和風感のある魚介系、醤油は極僅かしか使われておらず出汁からくるキリッとした塩味とコクのある旨みがありたっぷりの鶏油が厚みを与えいます。
麺は中細ストレート麺、かた茹でされておりパツンとした歯切れと喉越しの良さがありスープも良く馴染みます。
シャキシャキとした瑞々しい水菜やタケノコ、鯖の煮干は仄かに甘みも感じられスープも染みています。
チャーシューは細くカットされた脂の多いこってりとした部位と厚切りされ肉の味が活かされた２種類が使われておりどちらも美味しくいただきました。
味変アイテムで七味や粉山椒も置かれており味の変化を楽しみながいただく事も出来る鯖の旨みを詰め込んだ和風感のあるラーメンでした。
