ChefYugo Takahama - A craftsman who captures the hearts of guests with his personality and taste.
Born in Kobe in 1989. After training for seven years at a Sushi restaurant in Sannomiya, he was assigned to the Sannomiya branch, a high-end sushi restaurant originating from Osaka. The former is Akashi-style Sushi using white rice, and the latter is Edomae-style sushi using red vinegar. Then, in April 2022, he bought the store where he was the general manager and became independent. At his restaurant, he uses red vinegar that he carefully selects and continues to pursue sushi that combines the best aspects of Akashi-mae and Edomae.

The rice is made from Nipponbare rice from Shiga Prefecture, and is purposely cooked to be firm so that you can feel the grain of the rice. The red vinegar is aged for 3 years and blended with rice vinegar to create a punchy yet harmonious combination with all the toppings. I want you to experience the collaboration between the toppings and the sushi rice that weave together in your mouth.
