The Tabelog Award 2019 Bronze 受賞店。
鶏一途の看板のある所を入り、階段を上がった右手に入口があります。
カウンター7席、テーブル8席の焼鳥屋らしくない、落ち着いた空間のシックなお店です。
厳選された滋賀県産地鶏を使用しています。
今回は、〇付だし
〇ささみ レア焼きなので肉汁がたっぷり
〇つくね パン粉をまぶして焼いて、中はふんわり、モッチリ
〇ねぎま 鶏脂がねぎにまでしみわたって美味
〇たたき 厚切りの炙りたてをポン酢かまたは、フランス産ゲランドの塩をつけてたべ
ると、柔らかくコリコリとした感じです。
〇手羽先 表面がパリパリに焼かれボリュームたっぷり
〇鶏パン クリーム入りのペーストを塗って、炭火で焼いたフランスパンで、外側は香
ばしく、中はフワフワです。
〇デザート
をいただきました。
このお店のこだわりの一つは、素材の味を引き出す基本調味料の塩。
又、ねぎま・極上胸肉・皮・手羽先は、雌雄の食べ比べができます。
焼鳥の食べ方は、
1 焼きたてをすぐに食べる
2 串からぬかずに食べる
1・2は肉汁を逃がさず食べるため
3 調味料は最小限度にして食べる そざいそのものの味を食べるため
