~Authentic Beaune-style flavor~ ~Served locally in Shukugawa using European and Japanese ingredients~ After four years of training at the Michelin-starred Restaurants Le Benaton in Beaune, the food capital of Burgundy, France, he opened his own restaurant in Shukugawa, where he was born and raised, in 2008, taking on the same name. Burgundy is also known for its Golden Hill, a famous wine-producing region, and Beaune is located in the center of it. In 2015, the Burgundy Climat (vineyards and climate) was registered as a World Heritage Site. On the third weekend of November, Beaune holds a wine and food festival called "Les Trois Glorieuses", and the small town surrounded by vineyards becomes the "food capital of France". He hopes to continue the authentic taste of Burgundy and develop it in his hometown of Shukugawa, incorporating ingredients sourced from Europe and local ingredients from Hyogo Prefecture.
