For the interview, we visited Indigo, a few minutes north of Kawanishi Noseguchi Station on the bus route. Its reputation for tasty Indian Cuisine has spread by word of mouth, and this year marks its
...sixth year. The owner, who has an endearing gentle smile, says, "Authentic Indian Cuisine contains a lot of oil, so we reduce it considerably to suit Japanese tastes. Also, other restaurants add a surprising amount of sugar and chemical seasonings, but we don't use any at ours. Furthermore, we use real spices that are expensive and unavailable at other restaurants, so the cost is extremely high and it's a lot of work." The three types of curry we tried certainly do not have the distinctive flavor of Indian Cuisine, and have an exquisite punch of umami, sourness, and spiciness, making them easy to enjoy even for those who don't like Indian food. In addition to freshly baked naan, charcoal-grilled tandoori chicken and other dishes are prepared "freshly" after an order is placed.
