Most of the ingredients we use are sourced directly from their respective production areas. We use Shimane Prefecture's special A-rank "Tsuyahime" rice, cabbage that changes its production area depending on the season, and three types of Saikyo miso. We use "Yonezawa Pork" from Yamagata Prefecture, which has a good balance of lean meat and fat, and Kagoshima Prefecture's black pork, known as the "Diamond of Satsuma." "Chicken fillet cutlet" made with Daisen chicken from Tottori Prefecture is also a popular menu item. For a limited time, we will also be offering dishes using local pork from around the country, so please come and try them!
