Japanese Cuisine Waraku is located in the center of Sumoto City (Sumoto City Ginza). There are about 8 counter seats and 3 small seating areas (one of which is a private room). The food is prepared by the owner, and the service is provided by the female staff. I think Sumoto has put a lot of thought into their cooking. First, I ordered the squid sashimi, and I was looking forward to seeing how it was prepared, as raw squid is difficult and time-consuming to prepare, but I was disappointed in both the quality of the ingredients and the freshness. I don't think you can go wrong as long as the squid is delicious. Well, the mackerel tataki had nice fat and cooked well, so it was a recommended dish. From the menu, we chose original dishes such as fried cheese Toji, dengaku millet gluten, soup with bamboo shoots, and simmered mebaru. I think both millet wheat and bamboo shoot soup have good seasoning. The soup stock for the boiled blacktail was quite good. I think Toji fried chicken is fine as is, but I thought it would be better to use ingredients other than cheese. The paper pot with duck and mizuna is made with duck and mizuna, but since there was no mizuna, I changed it to Chinese cabbage. This soup stock was delicious. This item is recommended. If possible, I felt like I would like at least two more types of vegetables. There are several types of sake, including Miyabijin and Matsuno Tsukasa Raku, and shochu such as Ryugu. By the way, Matsuno Tsukasa no Raku is also called Waraku, and I heard that they stock it. When I visited on a Sunday night, the other customers were two women and three men, and they were enjoying the food. It seems that they have a firm grip on local customers as well. Overall, I feel that this is a Japanese-style meal restaurant that will continue to improve.
