煮干そば 白醤油 手揉み麺

本日の煮干スープは、伊吹いりこ、岩手片口、
氷見背黒、牛深秋刀魚、牛深太刀魚を使用とのこと。
煮干そばも、醤油、塩、白醤油とあり、麺も細麺と
手揉み麺がありますので、煮干そばだけでも組合せ
が多彩といえます。
煮干が浮いたスープはすっきりしていてエグみもなく
美味しい、麺はもっちりしていて好みのタイプ。
低温調理されたチャーシューも肉質良くうまし。
300円で味付き替え玉をオーダー、4種からMrTOMを
トムヤムクン風になります。具材は豊富とは言えま
せんが、麺が激ウマ!麺の旨み歯ごたえ喉越しイイね。
