岩手県の盛岡市内にある鰻店『善』は。
予約必須の鰻店で、訪問日もやはり予約のみの満員御礼状態。注文を受けてから調理に取り掛かるスタイルで待ち時間も長い。当日並んでどうこうという話ではないのです。鰻は大きく関東風と関西風に大別されますが、その両方を提供しているのが面白い。さらには、名古屋発の文化であるひつまぶしの用意があり、全国の鰻の調理法をマスターしている言っていいかも。
特選うな重、3300円也。
蒸しの工程を経る関東風。柔らかさがその最大の特徴ですが、厚みとそれに反比例するようなふわふわな食感はまさに関東風。おかげで脂の旨味がとろけるように口の中に広がっていきます。すっきりとしたタレだが、炭焼きによる香ばしさが食欲をそそるものに。そんなアウトプットなので、当然のようにご飯との相性を作り上げます。なるほど、予約必須に納得。美味しいものを食べるのは簡単ではない。ご馳走様でした！
