各地に行って、ご当地の「鰻」を食べるのも好き♡⃛
四国だと四万十川の鰻を思い出しますが、今回は香川県のうなぎ屋さんへ
うなぎの焼き方・・
関東風は、背開きした鰻に串を打ち、白焼きにした鰻を蒸して脂を落としてから焼き上げます。
関西風は、頭を落とさずに腹開きにした鰻に串を打ち、蒸さずにそのまま焼き上げます
開き方は諸説ありますが、
江戸時代、関東では、腹開きは「切腹」を連想させるので嫌い、関西は「腹を割って」付き合うなどの違いで分かれたみたいです
境目は
豊橋市辺りが東西の焼き方があるみたいです☺
鰻って贅沢ですよね
だいたいお重にご飯と鰻、吸い物に肝吸いとシンプルながらも何千円もしますもんね
ここは比較的、お値段も抑え目で、茶碗蒸しも付いてました
焼き目もしっかり付いてて、濃い過ぎないタレとの相性も良かったです
年々天然・養殖共に数が減ってる鰻・・こうやって食べれ無くなる日も来るのかな？
