The experience of the salt shabu shabu shabu course at Kotobuki-an was truly a trip to enjoy. The refreshing daidai dressing of the salad that was served at the beginning raised high expectations from the start. The braised pork that followed was reminiscent of Okinawan rafute, and I was impressed by its softness and deep flavor. However, the main course of black pork shabu shabu exceeded my expectations even further. The thinly sliced pork was so tender that it melted in my mouth, and the combination with the salt was exquisite. In particular, the accent of the chili pepper salt was surprisingly good, and the fresh vegetables also went perfectly with the salt. If you try this course, you will definitely become addicted to salt shabu shabu. The deliciousness of the rice cooked in a kamado was also outstanding, and everything, including the dessert, was perfect. For this quality and price, Kotobuki-an is truly an exceptional choice.
