I finished my work in Kagoshima on this day. We held a year-end party for our customers and vendors at the beach in the morning. I had been there a few times before and knew about it, but I hadn't stepped through the curtains yet. The inside of the store is bright and the maids are moving around energetically, and both the counter and the tatami rooms are very busy. It's lively. We reserved a tatami room. When we take a seat, we celebrate the past year's hard work with a glass of draft beer. After a while, the flounder sashimi appeared. It is plump and plump and goes well with sweet soy sauce. Instantly change from beer to sweet potato. The alcohol goes on. And of course the main thing is chanko. You can choose soy sauce, salt, or miso for the dashi, but this time I chose miso. The toppings include one and a half pieces of spiny lobster! The dashi is rich. It has a very deep and creamy mouthfeel, but it's not dark at all. I guess it's the secret flavor. In the end, I continued to drink sweet potato with dashi until the end...I'll try salt next time.
