The carcass is judged by a craftsman at the meat center. Select meat that is not too frosty and has a good balance with lean meat. We mainly purchase Wagyu beef from Kagoshima Prefecture in bulk and then hand-handle it by our craftsmen. We want you to enjoy each piece of tender meat that we deliver to our customers, made with love and care.
