We use noodles from Menya Teigaku, a long-established noodle shop in Kyoto that is famous in the Ramen world. The owner sampled more than 100 noodles and chose the 100% domestically produced wheat noodles. It is characterized by its thin noodles that mix well with the soup and allows you to enjoy the rich flavor of wheat. We don't have large servings of noodles so that you can enjoy your meal until the very end. Please enjoy the hard-boiled, crisp and chewy noodles with the elegant soup. As for the substitute balls, we recommend “Barikata”◎

Our signature menu is soy sauce-based Chinese noodles. First, take a bite of the soup. The umami is condensed from domestic chicken bones cooked in soft water, Rishiri kelp, Rausu kelp, Shiroguchi dried sardines, dried bonito flakes, and Ohisama-dried shiitake mushrooms from Nagashima Farm, which has been in operation for 500 years in Yokohama. Kaeshi is a unique blend of flavorful Yokohama soy sauce. The soup has a strong and deep flavor that is hard to believe for Ramen that does not use chemical seasonings.
