本日は私用で横浜駅側を訪れたついでにこちらの店を初訪問。
先日「龍味」を訪れた際に偶々見掛けて存在を知った店です（汗）
11時46分に到着すると、店内には先客が未だ誰も居ない状況です。
ただ、私が食べ始める頃には満席になると共に若干の待ち客が出ていました。
先ずは「中華そば」の食券を購入し、席に着いて食券を渡すと待つ事4分ほどでラーメンが到着です。
醤油スープには鶏油が煌く様に浮いていて、ストレート細麺の上にはチャーシュー、メンマ、ワカメ、微塵切りのネギや紫玉ネギ、海苔が乗っています。
先ずはスープを飲んでみると、醤油が些か強めに出過ぎていて、出汁の味わいが舌に若干伝わり難い印象です。
出汁は鶏や煮干し、鰹節や椎茸との事ですが、醤油ダレの風味や塩味の背後から仄かに気配を感じる程度です。
塩角は殆ど感じないものの、塩味が不自然に目立っていて、尚且つ醤油の持つ若干の渋味や酸味が舌に触ります。
この醤油ダレに感じる違和感は、嘗て「はやし田」で感じた不自然な味わいに何処となく似ている様な気がします。
次に麺を食べてみると、低加水寄りの細麺が硬めに茹でられていて、粘りを帯びた歯触りと共に小麦粉の鮮明な風味を感じます。
ただ、細麺にはスープと共に鶏油が存分に絡み込むものの、スープの塩味が障壁となって鶏油の旨味が舌に伝わり難い印象です。
次にチャーシューを食べてみると、低温調理でレア気味に仕上げた豚肩ロースが若干薄めにスライスされています。
肉質は至って軽めに味付けされていて、薄めな肉にスープが絡みつつも熱が適度に伝わる事で上質な豚シャブの様な味わいを与えます。
食べ終えた感想ですが、私個人的には残念ながら醤油ダレの独特な味わいが全く口に合いませんでした。
ただ、レビューを見る限りでは高評価の方が圧倒的に多い為、単に私の好みに合わなかっただけの話と捉えて頂けると幸いです。
未だ開店したばかりですので、暫く経って落ち着いた頃に改めて訪れたいと思います。
