紹介
昭和２年２月１日、京王線下高井戸駅際に蕎麦屋「旭家」が開店しました。
これが旭鮨総本店の創業です。 屋号の「旭」は、元々足袋職人だった創業者の高野勘次郎が
独立し、大正５年に足袋屋「旭屋」の看板を掲げたのが始まりです。
朝日の如く勢いよく昇り、山川草木を初めあまねく照らす原点という意味がある「あさひ」、
しかし「朝日」ではなく「旭」としたのには理由があります。
「旭」は分解すると九日になり、十日を満願とすればその一歩手前になります。
何事も完成成就すれば心も緩みますが、常に「まだまだ」と自分を戒め、
励まし続けいくという創業者の心意気が込められているのです。
その心意気が飲食店の起業へと繋がっていったのです。
