Reopening!! Aged Yakiniku (Grilled meat) specialty store
The Kannai Takumi-ya main store has been renovated and reopened as Takumi-ya 33, a restaurant specializing in aged Yakiniku (Grilled meat). |
関内駅から数分。セルテの裏にある建物の8階にある「匠屋33」。
匠屋33では、鹿児島県の平松牧場の平松社長自ら厳選したエイジングに最も適した「黒毛和牛のグランドマザービーフ」をエイジングビーフのリーディングカンパニーであるエスフーズの熟成庫で、33日間ドライエイジングした牛を使用。
熟成肉とは…
骨付きの大きな塊肉を、剥き出しのまま低温、高湿度で20日以上寝かせ、お肉の中のたんぱく質が分解されうまみ成分であるアミノ酸へと変化させた深い味わいのお肉。

今回は匠家コースで！
お肉は木製のお盆で提供され、見ごたえ抜群。どのお肉が何のお肉なのかしっかりと部位が書かれた説明がついているのでわかりやすい。提供時にお肉の食べ方、どのお肉にどのたれが合うのかも説明してくれます。お肉が多少黒く変色しているものは、熟成の証。熟成肉は岩塩がまぶされているので、焼いた後は香りと共にそのままで。
ここのお店の裏メニューの「ユッケ」がおすすめ！美味しいユッケがきれいにお皿に盛られ、黄身と金粉が！めちゃくちゃうまいです。これは確実に追加注文。
