イイね♬をポチして下さる方の口コミ投稿から発見したお店です。
食べログで喫煙可能店と紹介されてますが、お店にTEL確認した処、ランチタイムは店内禁煙との事で訪店しました。
「本町4丁目」バス停徒歩3分。
桜木町駅からも近いですが、目立たない場所にお店はあります。
目立たない場所にある小さな〝さば料理専門店〟はたして大丈夫でしょうか？

魚や野菜は、豊漁・豊作で安価な方が品質優秀です。もう少しコストが落ちると良いですね。

味変用の〝だし汁〟付きです。
味噌汁は付いてなくて、拙僧は〝だし汁〟で代用する事にします。
食事中2人スタッフのうち1人は、退店までずっと大きめな〝トゲ抜き〟でサバの切り身から骨を抜いてました。
地味な作業ですが手間暇掛かります。
食材・肉や野菜には無い作業です。
ご飯が美味しいです♬
ただし、肝心のサバは質・量共にもうふた頑張りでしょうか？
釣り上げ直後の〝生さば〟を食べてきた、うちのご主人の〝生さば〟料理の評価は厳しい。
生き締め数時間後に食べる〝生さば〟の味は、こんなもんじゃない。
もっと大胆にゴマ油や香味野菜を使って欲しかったです。又卓上調味料にサバの臭み防止の為セージやペッパー・ジンジャーが欲しかったですが、いずれも不在で卓上調味料は貧弱でした。
口が重いスタッフさんにゴリゴリ質問して以下訊いてみました。
料理名は〝胡麻サバ丼〟ですが使ってるサバは〝マサバ〟だそうです。
使ってるサバは店まで輸送され、今使ってるサバは皆九州から。
時にノルウェー産の鯖を使うそうです。
オサレなお店には最初、お1人様男性3組と猫1匹。
正午頃から50歳代女性客3人1組に20歳代女性お1人様でした。

〝さば料理専門店〟というアイデアは素晴らしいです☆
サバはとても美味しい魚ですが、〝サバの生き腐れ〟という言葉がある様に、サバを安心安全且つ美味しく生食する為に管理するのは、中々大変な筈です。
今回は質・量ともに、もうふた頑張りなサバに感じられましたが今後に期待したいです。
あと、丼料理でも味噌汁付けた方が良いと思います。
