The hot water in which the shark fin is simmered is made in-house by boiling chicken bones, pork bones, etc. for a long time in an armful of water, and is packed with collagen and flavor. This hot water soaks into the shark fin and the accompanying vegetables, creating a melt-in-the-mouth flavor of the shark fin.
