There are three tricks to opening it beautifully. ① The omelet will become harder and harder due to residual heat. All of our Omelette Rice is made using a brand of eggs called ``Joppari,'' which I have carefully selected after tasting over a dozen different types of eggs. The egg itself has a very strong flavor and goes perfectly with our rice and sauce. I use as many as 3 such eggs. (Regular size) After receiving an order from a customer, we carefully create each item one by one. I don't make them in advance or in bulk. We want to deliver a fluffy and melty omelet to your table the moment it's ready.
