「波と風」
奥さんと亭主の名前を借りて店名にしたそうです。
カウンターに調理場とバーが両方あるのがこのお店の一番の特徴で
大将が料理を、奥さんがバーテンダーをやっています。
銀座の名店（主水かオーパ？）で修業したそうですね。
白木のカウンターに座り、初回なのでコースを注文、どんな料理に出会えるかわくわくします。
前菜は青物三種でお浸しと緑の豆に蛸の煮物に法蓮草がそえられています。
青々とした野菜とよく煮込まれた蛸、日本人の料理ですね。
印象に残ったのはローストビーフ、桜の燻製で燻されていて細かい職人技に感心しました。
美味しいお肉でしたが個人的にはもっと脂が少ない方が好み。
料理の最後はそばを啜って終わりですが、このあとデザート。
そしてバータイムへと移行できるのがこの店の真骨頂ですね。
まだまだそこまで有名ではありませんが、実力のある名店です。
