築160年以上の邸宅をリノベーションし、
1日2組のメゾネットスイートのホテルと共に、
オープンしたレストラン。
庭園を抜けて向かう入り口は、
入る前からとてもステキな空間で、
非日常を演出してくれます。
この日はディナーに伺いました。
●夏野菜
生ハムの泡、
ガスパチョ、
29種の夏野菜、
みやじ豚の3年熟成した自家製生ハム、
モッツァレラチーズ。
ガスパチョには西瓜を使用していて、
爽やかな甘味が美味しい♪
29種類の夏野菜に、
スイカを加えて30種類となります。
●鱸と烏賊墨
山形県鱸のポワレ、
烏賊墨のソース、
泥障烏賊、
シブレット。
トマトソースをベースに、
鱸の骨、昆布、下足、貝などを加えた烏賊隅のソースは、
しっかりと旨味があって、とても美味しい♪
鱸そのものよりも、
しっとりと柔らかな障泥烏賊と、
烏賊隅のソースがメイン級の美味しさ♪
●鯵と茗荷
フェデリーニのペペロンチーノに、
鯵と茗荷、
オリーブ、アンチョビ、ニンニク、ケッパー、
面白いのが蓼。
シンプルに美味しいパスタ。
●知多和牛と玉蜀黍
知多和牛のランプのロースト、
ヤングコーン、1時間ロースト
玉蜀黍のピューレ、塩と水
ポップコーン。
ヤングコーンは1時間ローストし、
塩と水を加えただけのピューレは、
すっきりと玉蜀黍の甘味が味わえます。
ランプの火入れも良く、
しっとりとした素晴らしい仕上がり！
●自家製パン
オリーブオイル
毎朝焼き上げる自家製フォカッチャは、
きめ細かめでふかふか。
●夏×４
ココナッツのエスプーマ、
リオレ、
ベリーのソース。
普段はあまり好まないリオレですが、
こちらはとても美味しくいただきました。
●パイナップルとバジル
パイナップル、オレンジ、パッションフルーツのマリネ、
パイナップルとバジルのソルベ、
カヴァのかき氷、
マンゴーのソース、
大葉のソース。
