村野シェフはサンフランシスコのSaison出身！
季音というお店の名前はシェフの愛する息子さん達の
お名前を一文字ずつ取って付けられたそうです。
そんなとても素敵なお店です。
店内に入るとまず雰囲気がとってもいい！
村野シェフが薪火撮っていいよと声をかけてくださり
始まる前にカウンターの中に入れてくださいました。
そんなことなかなかできないので
とても貴重な体験をさせていただきました！

カトラリーは自分の席に引き出しがあり
そこから順番に使っていく感じになっていました。
お料理が出てからカトラリーを出して使います。
使う順番はシェフが教えてくれるのでご安心を！
それぞれのお料理ごとに薪の香りの強さが全然違くて
食材の良さを活かしてる感じがとっても好きでした！
どれも美味しかったけど、特にお気に入りは
金華鯖とリゾットと豚さんかな〜！
サラダも好きでした！
村野シェフは薪を
ただ香りつけだけに使うのではなく、
お肉や食材の水分を逃さず
美味しく食べてもらうための調理法として
薪を使われているそうです。
なのでどの食材も旨味を逃さず
ぎゅぎゅっと美味しさが詰まっています。
また、リゾットで使われている蛸節も
薪を使って乾燥させて手作りされています。
これが本当に美味しくて
お持ち帰り用の蛸節があるので帰りに購入しました！
トータルバランスがすごく良くて大満足でした！
季節を変えてまた伺いたいお店です。
