We use the highest quality brand Cow tongue grown on specific farms in Australia. Among them, the tip of the tongue is not used, and after selecting the highest quality and softest part of Cow tongue, the tongue is cut, seasoned, and aged in the refrigerator for about three days. Using the strong firepower of oak charcoal from Iwate Prefecture and skilled craftsmanship, we grill Cow tongue that brings out the maximum flavor until it's crispy on the outside and juicy on the inside. In addition to being a set meal with our signature tail soup and roasted barley rice, it's also perfect for pairing with alcohol.
