[About reservations] Please check the table. We begin accepting reservations from 12:00 on the 1st of every month until the end of the following month. We do not accept calls, Instagram DMs, or auto-reserves. [About the difference between weekdays and weekends and holidays] We recommend visiting our store on weekdays. When it comes to internal organs, we believe that the taste, aroma, and texture are best if you eat them on the day you purchase them. Leaving tongue and skirt steak overnight from the day you purchase them will cause them to lose their flavor and change their texture, and liver, striped chicken, senmai, and Other hormones will also lose their flavor or become hard. I don't know if the subtle differences are understood by the customers, but I want them to enjoy the food in its most delicious state, so on weekdays I try to serve the food that I have purchased that day. I can't do that on Saturdays and Sundays because there is no stock, so the flavor is poor. Regular meats such as loin and short ribs are delicious regardless of weekends or holidays. [About out of stock] If you make a reservation on Saturdays, Sundays, or holidays, it is expected that the item will be out of stock. Wagyu beef tongue, skirt steak, and sagari may not be available. We do not take reservations, so if you are looking for such items, we recommend making reservations on weekdays. I go to stock every day from Tuesday to Friday, so I have most of the items in stock. On Saturdays and Sundays, we operate with items purchased on Friday, so if everything is sold on Friday, there may be items that are out of stock from the time we open on Saturdays and Sundays. Wagyu beef tongue and skirt steak are particularly likely. [About selection Course] We are no longer accepting new applications for selection Course. Reopening date undecided. From now on, we will accept applications from OMAKASE.
