Tosa Manpuku Cuisine ``Hitosuji'' is located 2 minutes from the Tosa Electric Railway Hasuikemachi-dori tram stop. A local person introduced us to the owner, who is from Yasuda Town in the eastern part of Kochi Prefecture, and that his special cuisine is delicious. When you enter the store, the counter seats are on your left, and the horigotatsu seats and tatami mats are on your right. It looks like it can seat about 30 people. As the owner himself said, the ingredients are carefully selected and the food is prepared with great care, so the prices are higher than other Izakaya (Japanese-style bar). The yuzu used in this shop is from Umaji Village, which is famous nationwide. Among them, only the ``seedling yuzu'', which are old trees that are 80 to 120 years old, are selected and used. I had it a la carte today. “Utsubo no tataki” is exquisite. It is fluffy because it is cooked slowly in a frozen container. Delicious with the accents of ginger and garlic! “Utsubo fried chicken” is another Local Cuisine you cannot miss. It is a masterpiece that is full of deliciousness and has a light taste that you cannot imagine from its grotesque appearance. "Nirogi" is a fish that is generally called holly and is about 10 cm long. Lightly grill and eat the bones. Deep taste! It's perfect as an accompaniment to Japanese sake. The taste is doubled when you eat it with squeezed yuzu. ``Green Tempura'' is a cooking method that allows you to enjoy the deliciousness of green seaweed. High-grade green seaweed has an exceptional aroma and flavor. Kochi's green seaweed is famous for ``Shimanto seaweed'' and ``Muroto deep ocean water green seaweed.'' "Meshika Tempura" is the chef's recommended dish. The squid is so soft! We also had ``Tataki Hagatsuo'' (salt and ponzu sauce) and an assortment of sashimi. We enjoyed Local Cuisine and local sake.
