Buckwheat looks green. The reason is that a seaweed called funori is used as a binder. Niigata has an abundance of snowmelt water, making it an ideal environment for making soba. It has a chewier and smoother texture than regular soba. Please enjoy the aroma of Hegisoba. It's refreshing, so it's perfect for finishing the dish.
