The story begins with the tea we are given, which is more like plain water and has a subtle umami flavor. We learn about the great compatibility between natto and sea urchin, the strawberries pickled like pickled plums, and the way that freshly cooked rice, or more precisely, what appears to be uncooked rice, changes into rice in the bowl, as we savor each bite. Everything is like a story. The sake we asked to be matched is directly procured and is not widely available, and even though it has an unusual taste, when paired with the food it complements it, or is just right. The matcha we were given at the end had the lingering aroma and taste of the previous dishes, and perhaps it was just my imagination, but the end of the show felt like a slideshow of the dishes we had eaten up until that point.
