Kyoto cuisine where you can enjoy the seasonal flavors of Nishiki Market. Exquisite dishes made with "Nishiki's famous water" and carefully selected ingredients!
A hideaway located deep in the alleys of Nishiki Market (Nakagyo Ward, Kyoto City), where you can forget the hustle and bustle of the city. The boardroom is run by a head chef who trained at a famous |
I used it when I stayed in Kyoto for a week. This visit requires advance reservations. It was fully booked on the day of the event, so I think it's better to make a reservation even on weekdays. In the middle of the chaotic but lively Nishiki Market, there is a noren curtain reading ``Tobeian'' hanging at the entrance to a passage less than 1 meter wide. There is a shop at the end of that narrow passage. It's such a quiet space that it's hard to believe that you've just walked in from the bustling Nishiki Market. Tell the staff about your reservation and enter the store. From our seats, we could see a small courtyard with beautiful moss. Meals are decided at the time of reservation, so check the drink menu and order.・Pierre Zero Blanc de Blancs 1,500 yen My husband ordered This is a non-alcoholic sparkling wine that I have tried before. Since the alcohol is removed later, the flavor is good and delicious.・Oolong tea 600 yen It was really hot that day, so my body was craving a cold and refreshing drink. The food was brought out a little later.・Kyo Nishiki Kasane Color Hassun 2,970 yen Appetizer On top is a tofu-based mousse made with cashew nuts and apple cider vinegar. Refreshing and delicious! There was an ingredient at the bottom with a crunchy texture, but since I'm not familiar with food, I couldn't identify it. I should have listened properly... Water droplets on the lid of the bowl give it a nice cooling effect. When I opened the lid, I could smell the scent of soup stock. Here, the biggest mistake of the day! I forgot to take a photo of the food. Red winter melon stewed with beets, grilled zucchini, green chrysanthemum cabbage and grated yam kelp. Flower yuzu is floating in the soup stock, giving it a nice yuzu scent. The winter melon is soaked in the soup stock, and when you put it in your mouth, the juice and soup spread throughout your mouth. The strong flavor of the soup stock is delicious. Chrysanthemum cabbage, which is called shungiku in the Kanto region, is a bit of an unusual ingredient, but it had a nice aftertaste and was delicious. Kasaneiro Hassun This is a very nice arrangement. It's hard to see the ingredients underneath because they're stacked on top of each other, but if I'm not mistaken, there are 12 different dishes in there. Fish Somen: The light soup stock goes well with the minced fish noodles. Tomato: Peeled tomatoes soaked in Guihua Chin wine, slightly sweet and delicious. Paprika Sushi: It looks like tuna Sushi, right? Paprika has a seasoning. Ginger tempura: This was from the Marutsune Kamaboko store in Nishiki Market, and it was so delicious that I bought it on the way home. Carrot Fu: It had a sticky texture and was interesting. Rikyu-fu: It is a brown-colored wheat gluten. It's the first time I ate it. It was sweet and delicious. Kurumafu: Apparently it is seasoned and fried in rice oil. It looks like fried chicken. Angel shrimp: Angel shrimp from the brand shrimp. Although it was seasoned, I could really taste the shrimp. Low-temperature chicken ham: It has a moist finish and is thick but soft. Dashi-maki tamago: This is a flavor that you would never be able to make at home. Omi Konnyaku: This is an ingredient that has a great visual impact. It had a lot of flavor and was delicious. Finally, the pound cake made with rhubarb had a gentle sweetness, was moist, and delicious. Chirimen pepper was sprinkled on the rice. When my husband ordered a second helping of rice, it turned into Yukari. Miso soup looks simple, but the taste of the soup stock is amazing! Honestly, I wanted a second helping. I think it's really amazing to have this many elaborate dishes for less than 3,000 yen. The owner uses ingredients from Nishiki Market, so you can buy what you like on the way home. The contents seem to change depending on the season, so I would like to go again in a different season.
