At our restaurant, we are particular about carefully selecting domestic ingredients as much as possible, including ingredients from Kyoto and domestic beef. Our chefs have trained not only in France and Italy, but also in Thailand, India, and other countries around the world. Rather than using a lot of butter and fresh cream, which is often seen in traditional French cuisine, we incorporate ingredients from Japanese food culture, such as dashi soup, soy sauce, mirin, and sansho pepper, into our dishes. Fushimi tsukudani may also be used as a sauce for meat◎
