京都名物のにしんそばだが、実はにしんを煮るには手間がかかるため、市販の物を使っているそば屋さんが多いそう。こちらでは自家製にこだわり、水で戻し、アク&脂抜きを行い、何十年と追いたしを続けるタレで本炊きするまで、3日間も費やされる。手間ひまかけたにしんとおいしいおだしの贅沢なそば。にしんそば1000円。
