“Yi Chuan Chuan” is a Hot pot specialty restaurant that opened in Kyoto in October 2019. A restaurant where you can enjoy rare "Hot pot". I was curious about this store when I passed by it before, so I went right away. The inside of the store is built like a local food stall. There are only 25 seats in total, making it feel small. Drinks and food are in the refrigerator and you can take them as you like. There were also rare items that could only be found in China. There are so many ingredients for Hot pot! There are over 30 types of dishes, including meat, Seafood, and vegetable, so you'll be spoiled for choice. However, each one is quite small, and surprisingly you can use as many as you want. When I asked the owner, he said that some people eat all kinds. It's amazing. The hot pot itself costs 1,100 yen per person. Prices are simple and straightforward, with ingredients added to the pot costing 110 yen per skewer. There were also udon noodles and Sweets to finish the meal. There are also individual items, so we recommend ordering before the hot pot is ready. Instructions on how to eat Hot pot are written on the whiteboard. There are two types of soup stock in the pot: red and green. The spices inside are different, so you can enjoy it twice at once. Red is recommended for meat and green is recommended for seafood. You can add whatever vegetables you like. When it starts to simmer, throw in the skewers all at once. When the color changes, it's ready to eat. We are particular about the sauce we use, using the golden ratio of sesame oil: oyster: black vinegar = 4:1:1. The ingredients simmered in Hot pot are delicious with the slight sourness of the sauce! The spiciness is not close to the authentic taste, but rather mild to suit the Japanese palate. Therefore, even people who don't like spicy food can eat it without any problem! I was hungry so I had about 20 pieces. It's surprisingly light and easy to make. To finish off your meal, be sure to order udon. The chewy texture will make you addicted to it. At first glance, I thought it was a shop for young people with its bright neon lights, but the taste and atmosphere were just like the real thing, and it was delicious! Among the skewers, beef and pork are especially recommended. I was surprised at how high the level was. It's also nice that it's close to the nearest station. I would like to go there again when I go to Kyoto!
