...iharu's greatest feature is the well-balanced soup with richness, flavor, and depth. The pork bone base is firmly established using the head and knuckle bones, and a large amount of chicken carcasses is used to make it even easier to drink. To finish, high-quality back fat and pork skin are added and the soup is simmered over high heat for over 24 hours. It is the ultimate tonkotsu soup that the owner came up with after much trial and error, and which cannot be imitated anywhere else.
