京都二条の碓屋へ。開店前に着いて、お店が開いたら、予約でいっぱいで1人だけ入れた。
上うな丼をお願いする。今日のうなぎは、愛知の新仔とある。えんこう米という、日本で最も生産コストがかかっている贅沢なお米と言われるお米を使っている。ちなみに生産地は、近江八幡、これから行くやん！
今日は週末でお客さんが多いので、白焼きはできないということだった。
厨房で金串で鰻を焼いているのが見える。いい感じ。
出てきたうなぎはふっくらしている。今日のうなぎは、愛知の新仔とある。皮もパリパリではない上品な地焼き。これはおいしい。こういう焼き方はかなり難しい。
お米は確かにおいしい。もう少し硬く炊いてもらうのが好みではあるが。たれはあっさりでおいしかった。
京都で久しぶりに巡り合った、すばらしい技のうなぎ料理。
