店主の山本さんは、神戸のラヴニューをはじめとするパティスリーで腕を磨き、京都のレストラン【MOTOI】ではデセールを担当。
自身のお店では、
デセールとガトーをコースで提供されてます。
一品目は塩味の菓子から始めることで甘いものを食べたい欲を高めさせ、二品目以降は苦・酸・辛を効かせることで甘ったるさを残こさない工夫が。
生姜や花山椒など和の食材をエッセンスとして使用したデザートは、甘いだけでなく程よいアクセントに。
今回は【ショートコース】(2品1800円)をオーダー。
■アヴァンデセール
白ワインの葛湯にシャインマスカットと巨峰、アーモンドミルクムースにローズマリーのメレンゲ
■グランデセール
和梨とすだちをディルでマリネ、金木犀のシブーストと泡、エアリーなサブレ、梨のチップ
店主とゆっくり会話も出来て、素敵な時間でした。
