京都の、とくに和食は。東京などと比べて。水準が高い（私見）。そう思えてしかたない。
名料亭などで技術などを磨き。かなりのレベルに達して。ようやく独立して店を持つ。しかしそれは単に始まりにすぎない。それからは固定客を持つまで。試練が続く。
烏丸御池から姉小路通りを西へ。かなり二条城に寄ったあたり。こじんまりと、しかし趣きある店構え。店内は古伊万里など名器が。ところ狭しと並び。主人の美意識なのか。その感性には敬服する。アンティーク類もふくめて。落着いた大人の空間。実に心地良い。
かの和久傳出身の主人が。思う存分に腕を振るう。くわえて厳選した日本酒類。とくに幻の勝駒が常時飲める。それだけでも主人のこだわり。今回は初訪なのでランチに。これが残念で、この空間で、この料理の内容。次回はぜひディナーに。
ディナーは12000円と15000円。この料理の水準を勘案。CPはかなりオススメ。すでに食べログでは評価も上昇。今後はインバウンドを含めて。さらに人気を博すと思われる。京都の奥の深さは。このような名店の香り漂う。実力店がまだまだ潜んでいる。
今回は慌ただしいランチ。下記の簡単なコースで。どれも逸品ばかりで。銘酒・勝駒とともに。保科ワールドをすっかり堪能。日本酒バーとしては京都で。もはやトップクラス。
