1866年創業の老舗うなぎ屋『かね正』を訪ねます。
京都には至る所に”ろーじ”と呼ばれる細い道がございます。かね正もそんなろーじにあり、もうそれだけで少しテンションが上がります。そのろーじを埋め尽くす長い行列があった記憶がありますが、この日はたまたまかすんなり入店することができました。メニューにも英語メニューがありますが、確かに海外の観光客が多かった印象が強いですね。
老舗でありながら、メニューがユニーク。きっと海外でバズった理由もこれなのでしょう。
それが錦糸卵をたっぷりと乗せた四代目考案の「きんし丼」。関西風のパリッとした鰻とコントラストを作るように、ふわふわの卵が乗せられております。ちなみに、鰻も関西風の焼き方ながらも腹開きを採用するのも面白い。腹開きは身の両端が薄くなり均一に焼けないからという。ご飯も特製のタレを混ぜ合わせたもので、ご飯でご飯が食べられそうなアウトプットになっております。
