I went to "Yukiya," which was founded in Pontocho, Kyoto in 1929! They continue to make "Kyoto soba" that focuses on ingredients and techniques, wanting to convey the authentic taste. Yukiya's soba is made with 100% domestic buckwheat flour ^_^♡ I was surprised to learn that they only use carefully selected ingredients from Hokkaido and Kyoto. Please come and try the soba noodles, handmade with care by craftsmen, along with the rich, flavorful and fragrant "dashi" that is unique to Kyoto!
